Description
This Vegan Apple Galette has a delicious, buttery pastry dough filled with cinnamon and nutmeg spiced apples.

Apple Filling
- 3 large or 5 small Granny Smith apples, cut into 1/4 inch slices
- 1/3 cup white sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 2 tablespoons melted vegan butter
- 1 tablespoon cornstarch
Pastry
- 1/2 cup vegan butter, diced
- 1 1/2 cups all purpose flour
- 1 teaspoon sugar
- 3–4 tablespoons ice water
Instructions
- Place the diced butter in the freezer while prepping the apples.
- In a medium bowl, toss the sliced apples with the remaining ingredients and set aside
- In a food processor, combine the butter from the freezer, flour, and sugar. Pulse until crumbly.
- Drizzle in 3 tablespoons of ice water until dough just comes together. Add an additional tablespoon if your mixture is too crumbly.
- Wash your hands with cold water to cool them down.
- Turn the dough out onto a parchment paper lined baking sheet. Using your cold hands, combine the dough into a round disc. You don’t want to work the dough with your hands too much or the butter in the dough will begin to melt.
- Using a rolling pin, roll the dough out into a rough circle that’s about ¼ inch thick.
- Pour the apples onto the crust and spread out leaving a 2 inch border around the apples.
- Gently fold the edges of the dough over the apples, pinching the seams and any cracks together.
- Place the tart in the freezer and preheat the oven to 350.
- Once the oven is preheated, take the tart out of the freezer and place directly into the oven and bake for 55-60 minutes until golden brown.
- Remove from the oven and place on a rack to cool.
- Serve warm with vanilla ice cream or whipped cream.
