Sweet Potato Fritters


Description

Crispy sweet potato fritters served with zesty lemon chive aioli.

Sweet Potato Fritters

  • 2 medium sweet potatoes, peeled and grated
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1/4 cup all purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup avocado oil (divided)

Lemon Chive Aioli

  • 1/2 cup mayo
  • 1 lemon, juiced
  • 2 tablespoons dried chives
  • 1/2 teaspoon salt

Instructions

  1. Combine all aioli ingredients in a small bowl and set aside. If you have time, allow aioli to hang out in the fridge for two hours before serving.
  2. Peel sweet potatoes and grate either using a large box grater or using the shredding capability of a food processor (so easy!).
  3. Mix sweet potatoes with all purpose flour, cornstarch, and seasonings.
  4. Heat 2 tablespoons of oil in a cast iron or nonstick pan over medium heat.
  5. Using a spoon or your hands, place about 2 heaping tablespoons into a pile in the pan and use a spatula to smash down to a flat patty shape. 
  6. Allow to pan fry for about 2 minutes. Flip and cook the other side for an additional 2 minutes until brown and crisp.
  7. Remove from heat and place on a wire rack with paper towels beneath to catch any oil. Repeat until all fritters are cooked.
  8. Sprinkle the fritters with salt and fresh chives and serve with aioli.

Notes

You can make these fritters smaller and more bite sized by only using 1 tablespoon of sweet potato mixture at a time.
