We’re all about delicious and EASY recipes right now and this pasta is a home run for both. This roasted eggplant pasta requires minimal hands on time and the results are phenomenal! Recipe below:

1 eggplant, cut into 1/2 inch cubes
24 oz. cherry tomatoes
4–6 whole cloves of garlic, peeled
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon red pepper flakes
8 oz. pasta
1/2 cup parmesan cheese (dairy or non-dairy)
1/2 cup of fresh chopped herbs, parsley and basil

Preheat oven to 400.
Combine eggplant, tomatoes, garlic cloves, olive oil, salt, red pepper flakes in a 9x13 ceramic baking dish.
Bake for 30-40 minutes.
Mash roasted garlic with a fork and stir eggplant tomato “sauce”.
Toss with favorite pasta, Parmesan cheese, and herbs.
Serve with more Parmesan and herbs. Enjoy!

This vegan whipped feta is so easy and is perfect on toast, chips, crackers, or with fresh vegetables! It’s hardly a recipe: 1 block of vegan feta (I used @violife_foods), juice of 1 lemon, 1 handful parsley, 1 handful mint, a sprinkle of salt, and finished with 1/4 cup of olive oil. I topped this one with candied walnuts, more fresh herbs, and a drizzle of pomegranate molasses. The options are endless but this one is my favorite! 🌱

First pizza in my new (to me) pizza oven! I followed ‘Roberta’s Pizza Dough’ recipe from @nytcooking prepping the dough the night before and letting it hang in the fridge for 24 hours. Topped dough with homemade pesto, artichoke hearts, spinach, and ricotta before baking and finished with fresh lemon zest and black pepper. A fresh loaf of vegan banana bread to start the morning! Simple and classic recipe with easy substitutes to keep it plant-based. Recipe below! 🍌🌱

Ingredients:
3-4 very ripe bananas, mashed
1/2 cup vegan butter, melted
2 flax eggs (2 tablespoons of ground flax seed mixed with 6 tablespoons of water)
1 teaspoon vanilla
2 cups all purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt

Instructions:
1. Preheat the oven to 350 and prep a loaf pan by greasing the sides and bottom lightly.
2. Mash the bananas with the back of a fork.
3. Add in the butter, flax eggs, and vanilla and whisk thoroughly.
4. Add in the remaining ingredients and mix until combined.
5. Pour batter into prepared loaf pan.
6. Bake for 55-60 minutes until edges are brown and the middle is set. Enjoy!
