Fall in a pizza - butternut squash purée, sage marinated mushrooms, shallots, Parmesan cheese, shaved Brussels sprouts, and finished with hot honey! Based off my sweet and spicy butternut squash pizza - I adapted the recipe to make it even easier by using leftover butternut squash purée from a soup earlier in the week (I snagged a bit before thinning it out) and didn’t pre-cook the mushrooms but instead let them marinate while I prepped the rest. Everyone knows that salads are simply better when chopped and this single serve chopped salad (recipe in caption) is no different! Simply chop everything and toss with olive oil, lemon, salt, pepper, and Parmesan and you have a delicious salad ready to enjoy! 🥗

Serves 1-2:
1/4 head of cabbage
1/4 cup cooked chickpeas
1/4 cup olives
1 peperoncini pepper (~2 tablespoons chopped)
1/8 red onion
1/4 cup fresh herbs (parsley, basil, and/or mint)
1/4 cup freshly grated Parmesan cheese
2-4 tablespoons olive oil
1/2 lemon, juiced and zested
1 teaspoon salt
1/4 teaspoon black pepper

Chop the cabbage, chickpeas, red onion, peppers, olives, and herbs and combine with Parmesan cheese, olive oil, lemon, salt and pepper. Toss and serve!

* Cabbage is a sturdy green making this an excellent meal prep salad

August and summer are coming to an end but not without one more zucchini recipe (in caption!). This marinated zucchini recipe is so easy and there’s no cooking involved! A delicious goodbye to summertime! ☀️🌱

RECIPE for 2-4 servings:
2 zucchini/summer squash
2 tablespoons olive oil
1/2 lemon, juiced and zested
1 teaspoon salt
1/2 teaspoon Aleppo pepper (sub for 1/4 teaspoon red pepper flakes)
1 small garlic clove, grated
Small handful of fresh chopped basil
1/4 cup feta cheese (optional)

1. Using a mandolin or a knife, very (!!!) carefully thinly slice the zucchini/squash.
2. Pat zucchini/squash dry with a clean towel.
3. In a medium bowl toss zucchini/squash with the remaining ingredients.
4. Allow zucchini/squash to marinate for 30 minutes. Toss again throughout.
5. Eat on its own, in a salad, or serve with whipped feta and toast as seen in this reel!

We’re all about delicious and EASY recipes right now and this pasta is a home run for both. This roasted eggplant pasta requires minimal hands on time and the results are phenomenal! Recipe below:

1 eggplant, cut into 1/2 inch cubes
24 oz. cherry tomatoes
4–6 whole cloves of garlic, peeled
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon red pepper flakes
8 oz. pasta
1/2 cup parmesan cheese (dairy or non-dairy)
1/2 cup of fresh chopped herbs, parsley and basil

Preheat oven to 400.
Combine eggplant, tomatoes, garlic cloves, olive oil, salt, red pepper flakes in a 9x13 ceramic baking dish.
Bake for 30-40 minutes.
Mash roasted garlic with a fork and stir eggplant tomato “sauce”.
Toss with favorite pasta, Parmesan cheese, and herbs.
Serve with more Parmesan and herbs. Enjoy!
